The service starts with an aperitif of Hardanger Cider and chefs’ special hors d’oeuvre to get the juices flowing.

‘Rakfisk’ on potato waffles, cured egg yolks, sour cream jelly with dill, beetroot mayonnaise and pickled red onion *fish, dairy and egg

‘Smalahove’ terrine with pickled beetroot, pickled mustard seeds, mustard foam, and rye-bread chips *gluten and mustard
